SOOJI PITHA
INGREDIENTS
- SOOJI ( 1cup)
- WATER ( 2cup)
- SUGAR ( 1cup)
- PINCH OF SALT
- WHOLE PEPPER- 6-7
- COCONUT (1 grated)
- DRY FRUITS
- OIL (for frying if required)
PROCEDURE
- TAKE A KADAI AND ROAST SOOJI UNTIL IT IS LIGHT BROWN AND KEEP IT ASIDE.
- TAKE COCONUT AND SUGAR ( 1/2cup) AND MIX IT AND FRY IT. UNTILL THE SUGAR MELTS AND IT BECOMES STICKY. PUT DRY FRUITS AND MIX WELL
- IN A KADAI TAKE WATER ADD SUGAR ( 1/2cup), PEPPER AND SALT AND BOIL IT. WHEN WATER BOILS ADD THE ROASTED SOOJI AND MIX WELL TO PREVENT FORMATION OF LUMPS. REMOVE IT FROM THE FLAME AND COVER IT FOR 5 MINUTES.
- KNEAD THE SOOJI MIXTURE TILL IT IS SOFT. MAKE SMALL BALLS OUT OF THE DOUGH AND STUFF THE COCONUT SUGAR MIXTURE AND CLOSE PROPERLY.
- THEN FRY THE BALLS OR CAN BE BOILED IN A STEAMER.
